BEEF RIB EYE 2” LIP ON 112A

Also known as Ribeye Roll, this
cut starts as a 112A Beef Rib and is
made by removing all the bones
and surface fat. In the case of the
Ribeye Roll, the “lip” refers to the
tail of the cut which measures 2
inches in length from the end of
the ribeye. On the Ribeye Roll the
“lip” is removed.
